Mocha Madeleines
These are delicious for breakfast as well as during the day. (Make the batter the night before and chill, ready to use in the morning.) If you don’t have a Madeleine tray, use a shallow muffin tray. Success lies in a gentle folding technique, to capture the air that has been introduced.
Tinned Fish Fishcake and homemade Tartare Sauce
Here’s a quick-ish lunch suggestion that we originally included in our book Good Food For Your Table that we’ve now slightly updated, as we turned to it again in Lockdown whilst we were looking for easy lunch options. Take a tin of tuna, a tin of salmon, add some anchovies and some fluffy mashed potato and you’ve got a very taste dish.
Whipped Feta and Roasted Oregano Tomatoes
The next in our series of simple toppings to pimp your daily (sourdough) loaf. For Brunch, lunch or evening snack. This week we’re whipping up some salty feta and adding some end of summer sweet, oregano roasted tomatoes.
Spiced Chickpea Salad with Roasted Aubergines and Peppers
A satisfying salad that can be eaten cold or warm and keeps well in the fridge. Excellent with barbecue food or serve as a starter with peppered yoghurt. Good quality canned or jarred chickpeas speed up the process, as does a tub of shop bought fresh tomato sauce.
