Sauteed Brussel Sprouts

Whether you love them or hate them, the sweet taste of raisins is perfect combined with the natural bitterness of brussel sprouts. An ideal accompaniment to any Christmas lunch and an all time festive classic. 

Ingredients (feeds 4 people)
500g brussel sprouts
75g pancetta
50g raisins
250ml chicken stock
Salt
Black pepper


Method
Trim the base of the brussel sprouts and cut them in half.
In a frying pan, heat up some oil on a medium heat. Add the pancetta and cook until brown (approximately 4 minutes).
Add brussel sprouts until they start to turn golden brown, (approximately 5 minutes).
Pour in the chicken stock and add raisins.
Keep on a medium heat for 20 minutes until stock has reduced down and sprouts are tender. Add more water if needed.
Season salt and pepper to taste.
