Spiced Braised Red Cabbage
Slow braised red cabbage with apple, in red wine and festive spices. An ideal accompaniment to any Christmas lunch and perfect to add some sweetness to your day.
Ingredients (feeds 4 people)
1 red cabbage (quarter, remove the core and finely shred)
1 white onion (finely chopped)
1 Bramley apple (peeled and grated)
70g ginger (grated)
1 clove of garlic (grated)
60g demerara sugar
75ml red wine vinegar
40g raisins
60g butter
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
Salt
Black pepper
Method
Heat up a pan on a medium heat and melt the butter.
Add the chopped onion to the pan and cook for 3-4 minutes.
Add ginger, garlic, apple and cabbage. Sauté for 5 minutes.
Add the nutmeg, cinnamon, cloves, red wine vinegar and sugar.
Reduce the heat to low and cover with lid. Cook gently for 1 hour until cabbage is tender, stirring regularly.
Season salt and pepper to taste.
