Root Vegetable Mash
Enjoy a creamy mash of sweet potato, carrots and swede as a healthy alternative to your roast potatoes this Christmas.
Ingredients (feeds 4 people)
2 medium sweet potatoes
1 small swede
20ml milk (whole milk or non dairy)
Put a pan of salted water on to start boiling.
Peel and dice vegetables into chunks, roughly the same size (approximately 1-1 1/2 inches).
Boil vegetables for 25 minutes until soft and starting to break apart.
In a separate pan, gently heat milk and butter for 3-4 minutes just until butter is melted.
Drain vegetables into a colander, pour back into pan and mash the vegetables.
Add the heated milk and butter to the vegetables and stir until creamy. Season with salt and pepper to taste.
