As the name suggests oxtail is the tail of cow. All our oxtail is served sliced between the vertebrae. A hard working muscle and as such rich in collagen and gelatin; slow cooking this cut creates the richest gravy there is.
Oxtail really has the most beautiful deeply coloured meat and unique texture, after a long slow cook it just falls apart.
Order when available as each cow only produces one!
