Marmalade Ham Glaze
Take your Christmas ham to the next level with this ever so tasty glaze. Where possible use a Seville Orange marmalade to get that bitter-sweet taste.
100g muscovado sugar
½ tsp ground cloves
1 tsp mustard powder
1 tsp salt
Heat the marmalade and pass through a sieve to remove the peel
Add the sugar, clove, mustard powder and salt and return to the heat and mix to a smooth paste
Remove the skin from the cooked gammon and neatly score with a sharp knife.
Stud with cloves if you wish
Pour over the (liquid) glaze and roast at high heat 220°C for 15 minutes
Remove and cool
