Peter’s Yard started life in founder Peter’s native Sweden when one day he decided that there simply wasn’t enough decent bread on offer where he lived.
Taking up the challenge to remedy the problem himself, he embarked on a journey working with Jan Hedh – widely regarded as the pioneer of modern artisan bread making in Sweden – before they and another friend Christer opened their first bakery, Olof Viktors, deep in the Swedish countryside. In a traditional building they converted to add a wood-fired stone oven, they started making their bread. Their journey with Jan Hedh meant making bread and crispbread using traditional sourdough methods – a much more laborious and slow process requiring a high degree of skill, but with infinitely finer results.
Years on and a leap to the UK, saw the opening of Peter’s Yard coffee house and bakery in Edinburgh in 2007, where they now make their excellent crispbreads using only the best natural ingredients; Shipton Mill rye and wholemeal flours, sourdough, fresh milk and honey.
With its Scandinavian roots, Peter’s Yard Crispbread is a natural partner for our smoked salmon – with only the addition of some cream cheese and a sprig of chervil the combination makes a great canapé. Equally good are spoonfuls of smashed avocado, hummous or pate from our fridge.
They also make a very elegant addition to a cheese board, partnering equally well with goats cheeses or nutty Grand Jura.
Light and crispy and with a perfect balance of flavours; the mild sharpness from the sourdough and rye flour balanced with a touch of honey, they also pair well with sweet things – we like them smeared generously with unsalted Butter and our raspberry jam or Regents Park honey.
