We’ve been having some fun deciding on our favourite toppings for the Brindisa Gazpacho soup which is available in our shops.
Made from sweet seasonal tomatoes, along with cucumber, peppers, onion, olive oil and sherry vinegar. The result is a soup that really does transport you to the Med, especially during the glorious summer weather.
We recommend keeping this soup in the fridge throughout the Summer because it is so versatile. Whether you are having a cocktail party, a light lunch or supper in the garden, there is a serving suggestion to suit every occasion. Our favourite is to add a chunk of Artisan baguette serve with a glass of chilled Cotes de Provence Rose wine. To excite your guests, make the meal even more interesting by serving bowls of toppings for everyone to choose from.
Here are the toppings we're big fans of but feel free to create your own favourite and don’t forget a final drizzle of De Calabria extra virgin olive oil:

The Classic: heritage tomatoes and olive oil
The Mediterranean: artichoke, sun dried tomatoes and olives 
The Italian: torn mozzarella, pesto and basil 
The Greek: baked feta and onion seeds  
The Mexican: crisp bread, sour cream and green salsa 
The Spanish: grilled chorizo and chive batons 
The Seafood: fresh crab, cress and chilli oil 
The Healthy/Vegan: toasted seeds and alfalfa sprouts
